Spekuk - kueh Lapis spice










"Spekuk" Spice is being used in the famous "kueh Lapis" a multi layer butter cake.
It's also a very famous layers butter cake in Indonesia.
The wonderful smell of this cake come from a special "Spekuk spice", for those who can't get that spice, or being stay far away from Indonesia, here is the "Basic recipe" to make it, you can modified it to reach a taste that suit you.
Bumbu "Spekuk" digunakan dalam kueh lapis legit, salah satu kueh terkenal di Indonesia. Aromanya yg begitu wangi berasal dari kandungan bumbu Spekuk. bagi kalian yg tidak bisa mendapatkan bumbu ini, atau tinggal jauh dari Indonesia, ini resep dasar untuk membuatnya, bisa juga di modifikasi sesuka anda, hingga sesuatu dengan selera anda.

Ingredients (origin : Indonesia)

2 Tbs Cinnamon Powder


2 Sdm bubuk kayu manis



1 Tbs nutmeg powder

1 Sdm bubuk Pala


1/2 tsp clove powder

1/2 sdt bubuk cengkeh



1/2 tsp cardamom powder


1/2 sdt bubuk Kapulaga

Method :
Dry fry all the ingredients , grind them to powder and keep in a tight container, at a cool and dry place. Ready to be used.
Sangrai semau bahan, tumbuh hingga halus campur rata, simpan dalam toples kedap udara, tempat yang sejuk dan kering. Siap digunakan.

Bake Chicken Mid-join wing


You need :
12 chicken mid-join wing
1 tsp table salt
1 tsp Castor sugar
1/2 tsp white pepper powder
Combine all and marinate for 30 minutes

Bahan:
12 potong sayap ayam bagian tengah
1 sdt garam halus
1 sdt gula pasir
1/2 sdt bubuk lada putih murni
aduk hingga rata dan diamkan selama 30 menit.




sauce:
1 inch Ginger, finely chopped
2 Tbsp Red cooking wine
3 Tbsp light soy sauce
2 Tbsp Castor sugar
1/2 tsp table salt
Mix all the sauce in a sauce pan and thicken over medium heat for around 5 minutes.

Saos:
1 inci jahe, cincang halus
2 Sdm arah masak (merah)
3 Sdm kecap asin encer
2 Sdm gula pasir
1/2 sdt garam halus
campur semua bahan saos di atas wajan kecil , dan kentalkan di atas api sedang, kira-kira 5 menit

Preheat the oven @ 180 degree Celsius
Panas kan Oven dengan suhu 180 derajat.

Roast the chicken wing for 8 minutes
Panggang sayap ayam selama 8 menit

Remove from the oven, apply the sauce and continue roast until the chicken wing is cooked.
Keluarkan dari Oven, olesin dengan saos tadi, masukkan kembali ke Oven, dan panggang hingga matang.

Chicken Skewer

Love Hot Food? Thai food? Finger food? having a small gathering, confuse to what to serve ... this Chicken skewer might be your choice :D
Suka masakan pedes? Thai? makanan kecil? rencana kumpul2 temen dan bingung mau sediakan apa? :D mungkin ini pilihan mu!
you need :
200 g Minced Chicken
12 Pcs Lemongrass skewer/ sugar can skewer or even a satay stick can go well with it

200 g daging ayam cincang
12 batang Sere/tebu atau bahkan tusuk sate, yang mudah di dapat aja.




Chopped finely:

3 Garlic, 3 Shallots, 10 cm Lemon grass, Hot basil, 2 sprig Coriander leaves, Big chilly, Bird eye Chilly(Chilly Padi), 3 Tbsp light soy sauce, 1 Tbsp sugar, 1 tsp salt.


Haluskan 3 siung bawang putih, 3 siung bawang merah, 10cm sere,kemangi, daun ketumbar, Cabe besar, cabe rawit, 3 sdm kecap asin encer, 2 sdm gula pasir, 1sdt garam.


3 Tbsp oil to be used for baking purpose


3 sdm minyak sayur untuk digunakan saat mau memanggang.

Combine the mince chicken with all the finely chopped ingredients, mix well by hand, keep in your refrigerator for 30 minutes.
campur ayam cincang dengan semua bahan2 halus, remas2 dengan tangan agar rasa menyatu, biarkan selama 30 menit di
dalam kulkas agar lebih menyerap.



Prepare12 pcs - 4" length, Lemon grass, or sugarcane set aside
Skew the chicken patties with the skewer
prepare baking by apply Vegetable oil overthe surface of the baking pan, bake for 15 min @170 deg Celcius until cooked.

Siapkan 12 batang dengan panjang kira2 4 inci, sere, tebu atau tusuk sate, bentukan campuran tadi kira2 30 g lalu tusuk dengan batang sere/tebu/tusuk sate yg telah kita siapkan tadi.
tuangkan minya sayur ke loyang, lalu tata dengan rapi dan panggang dengan api 170 derajat Selsius, selama 15 menit hingga matang.


Serve HOT

Pineapple Cheese tart

Baking cookies from home is so popular. because it's easy!
here are some "tips"

- use whisker
- use Wooden spoon for folding
- do not "over whisk" your dough
- do not substitute margarine for butter
- Baking have to be at low temperature 150 degree C- 160 degree C
- shift the flour
- all ingredients must be in room temperature
- always preheat the oven

This is a must have cookies during Chinese New Year, there are lots of recipe about this cookies.

Kueh kesukaan setiap orang di berbagai perayaan hari besar, aneka ragam resep mengenai kueh "Nastar" ini.

you need:
- 2 egg yolks
- 50 g icing sugar
- 200 g salted butter
- 50 g edam cheese shredded
- a dash of salt
- 250 g all purpose flour (sifted)
All ingredients must be in room temperature!

Egg yolk mixture :
2 egg yolks plus 1 Tbsp veg oil , mix well for egg wash

- 2 butir kuning telor
- 50 g gula halus
- 200 g mentega
- 50 g keju edam
- 250g tepung terigu (di ayak)
- sedikit garam
Semua bahan harus di diamkan hingga mencapai suhu ruangan

Untuk memoles :
siapkan 2 kuning telor + 1 Sdm minyak sayur, aduk hingga rata



Batter : use whisk and wooden spoon!
in a mixing bowl, butter, icing , salt n edam cheese, and whisk it. add eggs yolk, one at a time until well blended, Add in flour, fold it by using a wooden spoon. Do not "Over fold"
Roll the dough into balls first, handle as little as possible to avoid tough cookies.

Adonan : gunakan sendok kayu dan kocokan tangan manual!
campurkan mentega, gula halus, garam, keju edam lalu kocok dengan kocokan tangan. masukkan kuning telor satu persatu, kocok hingga rata. Masukkan tepung terigu, aduk dengan sendok kayu hingga rata. jangan "aduk berlebihan".
bentuk adonan dalam bulatan.

then knead a cavity into the center of the ball, enough to fit in the pineapple jam, and wrapped it, roll into a round shape. from this shape you can create any shape you want :D

Lalu bentuk lobang di tengah, cukup untuk memuat selai nanas dan rapat kembali . bentuklah sesuai dengan keinginan anda. aneka contoh bentuk kueh nastar.


Preheat the Oven @ 160 degree Celsius, bake it for 15-20 minutes, take it out, wash with the eggs yolk mixture and bake again another 5 minutes or until golden brown..

Panas kan Oven terlebih dahulu dengan suhu 160 derajat Selsius, panggang selama 15-20 menit, keluarkan dr oven, lalu olesin dengan campuran kuning telor dan minyak. pangang kembali selama 5 menit, atau sampai kuning kecoklatan.

== Pineapple Jam ==

You can buy ready made pineapple paste, but I prefer to make my own, even though it takes 2-3 hours.

Anda bisa membeli selai nanas yg telah jadi, tapi saya lebih suka membuatnya sendiri, walaupun di butuhkan 2-3 jam lamanya. :D

Pineapple jam :
prepare it two days in advance
2 ripe pineapple
200 g Caster sugar
5 cloves
1 Tbsp of butter

Selai Nanas:
siapakan dua hari di muka
2 nanas matang
200 g gula pasir
5 cengkeh
1 Sdm mentega

peeled pineapple , and cut into smaller pieces, put into a blender n blend it.
Heat the wok, pour in the pineapple juice ,clove, and cook it with medium heat . Stir regularly until evaporated, add in caster sugar, keep stir it until golden brown, add in 1 Tbsp of butter, stir for another 10 minutes. cool it down, n keep in the fridge. Bring it to room temperature when needed
Roll the pineapple jam into ball in advance.

Kupas nanas, potong dalam bentuk kecil, masukkan ke blender, jangan lama!
Panaskan kuali/panci, tuang Jus nanas, cengkeh, masak dengan api sedang. di aduk sekali-kali, sampai cairannya hilang, masukkan gula pasir, aduk terus hinga kecoklatan, masukkan mentega , aduk 10 menit lagi, lalu matikan kompor, dinginkan, isi didalam toples, masukkan kulkas. saat mau digunakan , letakkan di ruangan hingga mencapai suhu ruangan.

Drunken Chap

I am using Gumpaste to make this Drunken Chap. I will upload how to make your own gumpaste for figurine next time , do check it up!


Saya menggunakan Gumpaste untuk membentuk "sang Mabuk Bir", lain kali akan saya jelaskan cara mudah membuat gampaste, sabar ya :D

Take a tiny amount of fondant to shape eyes, nouse and ears, glue it with "Water" set aside to let it dry. In high humidity country, the fast way to dry the figurine is using a dehumidifier or agent such as silica gel.

bentuk bulatan utk kepalanya, gunakan ujung kuas yg lancip untuk membentuk mulut. lalu bentuk hidung, mata telinga, dan lem dengan menggunakan "Air" biarkan mengering, untuk negara2 dengan kelembaban tinggi, gunakankan lah alat dehumidator atau menggunakan silca gel bisa mempercepat proses pengeringan.


Roll a smooth ball of fondant, roll the ball into a rope that is a thick as the arm. Flatten the hand in a slope to create the fingers. cut out the extra fondant from between the thum n the fingers. using a drinking straw to create the nails.


bentuk dua bulatan fondant, lalu gulung hingga berbentuk memanjang se ebsar lengan yg kita inginkan. tekan baguan ujung untuk membentuk tangan, buang kelebihan fondant di bagian jempol dan jari2 lainnya. Jika ingin menambahkan kuku, gunakan sedotan minuman yg kecil untuk membentuknya

Tidak perlu alat2 serba mahal untuk membentuk semua ciptaan anda, saya menggunakan semua perlngkapan yg tersedia di dapur , misalnya menggunakan penghancur bawang putih untuk menciptakan "Rambut"




Create the Body, the shirt, the leg n glue them all with water.. Voila! here come my "Drunken Chap"

the Joy of handiwork

My LOVE affair with handiwork started since I was a little girl .
Born in Sumatera island of Indonesia. Like all small town :D there is lack of leading kids stall for toys.
My early childhood was full with all kind of handicraft activity, to fulfil our hunger toward toys.
With all kind of adventures kids nowadays can't imagine it, can't have it.
My sibling, friends and I made our own necklaces from coconut flowers, plants' seeds.
Making our own cloth dolls etc.

"In Bahasa" Indonesian language
Semua ketelibatan karya tangan saya di mulai dari saat usia saya masih kecil. Lahir Di Sumatera- Indonesia, dunia masa kecil kurang jamahan dari aneka mainan anak2 masa kini. Semua yg di-inginkan, umumnya di-ciptakan sendiri. Untung Alam menyediakan semuanya , mau bikin kalung, ambil bunga kelapa, mau main masak-masak, tinggal petik semua bahan2 di pekarangan rumah, mau main boneka, bikin sendiri dari bahan2 sisa. Suatu petualangan yang tidak di miliki anak jaman sekarang.
