Guide for bakers


Baking a cake, it's not about a right or a wrong cake, sometimes it's more about a happy cake or a sad cake. Here are some guides that I collect from Wilton n other cake books.
Cake did not rise - over measurement of liquid
- pans too large
- oven temperature too low - over beating/under beating
Kueh ga ngembang
- takaran bahan2 cairan berlebihan
- loyang terlalu lebar
- suhu oven terlalu rendah
- telor di kocok kelamaan/kurang lama
Cake shrunken/ too small <
- over measurement of liquid
- oven temperature is too high.... cake is over baking
- over beating
Kueh menciut
- takaran bahan cair berlebihan
- suhu oven terlalu panas
- telor di kocok terlalu lama
Cake fell or dipped; was soggy, compact or heavy
- oven temperature too low
- cake remove from the oven before it is completely bake
- oven door opened before minimum baking time expired
- too much liquid - Extra ingredients added to the batter
- Excessive over beating/ under beating
Kueh bantat
- suhu di oven kerendahan
- kueh di keluarkan dari oven sebelum matang sempurna
- pintu oven di buka, sebelum pembakaran minimum tercapai
- terlalu banyak bahan2 cair
- memasukkan bahan2 tambahan di luar anjuran resep
- telor di kocok kelamaan/ kurang lama

Potato Pancakes

You need:
1 big peeled, grated potato
Salt to taste
little bit of pepper, italian
1 tsp butter
Method:
1.Mix the grated potato with salt, squeeze out all the juice
2. Add in pepper n Italian spice
3. Fry them in butter for both side . Serve Hot.
Bahan2:
1 kentang besar, kupas kulitnya, dan diparut kasar memanjang
Garam secukupnya
sedikit bubuk lada putih dan bumbu Italian.
1 sdt mentega
Caranya:
1. campur garam kedalam kentang yg telah di parut, peres cairannya
2. tambahkan bubuk lada putih, bumbu Italian.
3. goreng dengan mentega, sampai coklat muda, balik dan masak sisi lainnya . Sajikan panas.

IKEA Meatball


Recipe adapted from IKEA Swedish Food book
Yield 50 small meat balls

Resep adaptasi dari buku masak IKEA
Menghasilkan 50 butir bakso daging kecil


you need:
250 g minced beef
250 g minced pork
1 egg
100 ml cream
75 ml water
50 g shallots, finely chopped
30 g bread crumbs
250 g boiled potatoes, cold, mashed
Butter/I use canola oil for frying
1/2 tsp salt
1/8 tsp white pepper powder
Italian spice


Bahan2 :

250 g daging giling sapi
250 g daging giling babi
1 butir telor
100 ml krim
75 ml air
50 g bawang merah, cincang halus
30 g tepung panir/roti
250 g kentang rebus, dingin, dan haluskan
mentega/saya pengunakan minyak Canola untuk menggoreng
1/2 sdt garam
1/8 sdt bubuk lada putih
bubuk italia secukupnya

Method :
1. Heat the onion till golden in 1 tbsp butter. Set aside , let it cold to be use later
2. Mix all ingredients including buttered finely chopped shallots into a smooth farce of the right consistency, add in salt, white pepper powder, Italian spice.
3. using a pair of spoons rinsed in water, shape the farce into a round small balls, fry it over low heat in plenty of butter, or in canola oil.
Caranya:
1. panaskan mentega, tumis bawang goreng hingga wangi, dinginkan untuk di gunakan kemudian
2. campurkan semua bahan2, termasuk bawang merah yg telah di tumis tadi hingga kenyal, tambahkan garam, lada putih dan bubuk Italia, aduk hingga rata.
3. dengan menggunakan 2 buah sendok, yg dicelup ke dalam air, bentuk adonan tadi menjadi bulatan kecil, kemudian goreng di atas api kecil dengan mentega yang banyak, saya menggunakan minyak Kanola

for the sauce:
100 ml cream
200 ml beef stock
1 tsp light soya sauce
1 tbsp potato starch/tapioca starch salt
white pepper powder to taste
Saos:
100 ml krim
200 ml kaldu daging sapi
1 sdt kecap asin encer
1 sdm tepung kentang/tepung tapioka/sagu
bubuk lada putih secukupnya

Brown Meet Green in a wok

This is a very simple dish.
you need :
100 g fresh Shiitake mushroom, washed, cut into 5 thin slices
1/2 tsp fine Salt
100 g Baby Kailan, wash
1 tsp minced garlic
1 tbsp cooking oil
1 tsp potato starch for thickening mix with 2 tbsp drinking water sesame oil (option)
Method:
1. Heat the wok, pouring the oil, add minced garlic follow by shiitake mushroom over high heat, stir for a few second, powder with fine salt all over, stir for 3 minutes, this is to create a better flavour of shiitake mushroom.
2. Add in baby Kailan, stir, n cover the wok for 3 minutes.
3. thicken with Potato starch mixture, stir for 1 more minutes, put a few drop of sesame oil, if you like it. transfer to the serving plate. Serve hot.
Menu sayuran yang sangat sederhana.
Siapkan :
100 g jamur shiitake segar, cuci, buang bagian tengah, iris jadi 5 , tipis memanjang
1/2 sdt garam dapur halus
100 g sayuran baby kailan, cuci, tiris
1 sdt bawang putih halus
1 sdt tepung kentang/maizena untuk proses pengentalan , dicampur dengan 2 sdm air minum
minyak wijen (jika suka)
caranya:
1. panaskan wajan, api besar, masukkan minyak, tambahkan bawang putih, diikuti dengan jamur shiitake yang telah di iris, gongseng beberapa detik, lalu taburkan garam halus di atas jamur tersebut, gongseng selama 3 menit, dengan menaburkan garam halus ke atas jamur shiitake, akan terbentuk aroma dan rasa yang enak pada jamur tersebut
2. masukkan baby kailan, aduk hingga rata, tutup wajan selama 3 menit
3. buka tutup wajan, tuang larutan tepung kentang dengan air kedalamnya, aduk selama 1 menit, tuangakn minyak wijen beberapa tetes kalau suka. angkat dan sajikan di piring, hidangkan panas.

half boil egg

The easiest way to prepare breakfast is by serving half boil egg. How to get the perfect one? You need 2 eggs (60-65 g each) , Room temperature, washed water , small Pan with lid
method :
1. boil the water, cover the pan.
2. when the water comes to a vigorous boil, lower down the eggs, cover the pan, turn off the stove. The egg should be fully submerge in the water
3. set the timer for 6 minutes. Remove and serve hot by adding pepper and soya sauce.
Cara termudah untuk menyiapkan sarapan, adalah menyediakan telor setengah matang, bila waktu bener-benar terpepet. ingin hasil yg sempurna seperti yang di sajikan aneka tempat makan?
Bahan:
2 butir telor (60-65 g), ruang suhu, cuci bersih.
Air untuk rebus
Panci kecil dengan tutup
Caranya:
1. masak air dengan panci kecil tertutup, api besar.
2. Bila air mulai begolak, masukkan telor. Tutup panci, dan matikan api. telor harus tenggelam terendam air panas.
3. pasang timer 6 menit, siap disajikan panas dengan ditambahkan bubuk lada putih dan kecap asin, kalau suka.
