For seafood and Chillies lover.
you need :
2 Pcs of Stingray
Banana leaves n aluminium foil, for wrapping
pound together :
10 pcs red chillies
1 tsp salt
12 shallots
4 candlenuts
3 cm turmeric/yellow ginger
1 tbsp of toasted shrimp paste/ Balacan
1/2 tsp coarse sugar
2 tbsp lime juice, for mixing with the chillies mix paste.
1 tbsp cooking oil
method:
1. wash the banana leaves .
2. Spread the chillies mix paste on fish . Wrap fish with banana leaves first, and then double it with foil, as I am using hard anodized wok for bake the fish. smear it with cooking oil Set aside for 1o minutes in the refrigerator.
3. Place into hard anodized pan and bake for 10 minutes over medium fire, do check the doneness in between. Serve Hot.

sediakan:2 potong ikan Pari
daun pisang dan aliminium foil untuk membungkus
bumbu halus:
10 cabe besar
1 sdt garam
12 butir bawang merah
4 butir kemiri
3 cm kunyit
1 sdm terasi matang
1/2 sdt gula pasir
2 sdm air jeruk nipis/limao untuk di campurkan kedalam bumbu halus
1 sdm minyak sayur
Caranya:
1. cuci bersih daun pisang, keringkan.
2. Oleskan merata bumbu2 halus ke ikan pari. letakan di atas daun pisang, tambahkan lapisan alumnium foil dibawahnya, krn saya menggunakan wajan untuk membakarnya, tebar minyak sayur diatasnya . tutup lapisan foil, dan diamkan di kulkas selama 10 menit.
3. panaskan wajan, lalu masukkan ikan yg telah di bungkus dengan foil, panggang selama 10 menit dalam wajan tertutup, buka dan periksa kematangan ikan . hidangkan panas.
